For this elegant sweet wine, we harvested berries in November 2017 that were infected by noble rot (Botrytis cinereal), dried and concentrated with a sugar content of 22° Brix. After careful pneumatically pressing of the grapes, this delicacy is fermented slowly in large wooden barrels.
