Distillates and natural fruit-infused spirits

The process of distillation fascinated mankind for centuries. The craft of conserving fruit as distillates needs a lot of passion. We collect fully ripened and healthy fruits like apples, pears, apricots, plums, sour cherries, vineyard peaches etc by hand and mash them carefully. After a long and slow fermentation, we distil the fruit wine in a copper pot. Two runs are needed to produce first a raw and then a fine distillate. Only the heart piece of the fine distillate is used to be aged in either glass balloons or wooden barrels. For the spirits that are natural fruit infused we use our own distillates in which fruits like sour cherries or green nuts are added to dissolve all their natural flavours. We do not use any additional sugar or aroma substances.
