The somewhat different, bottle-fermented, fine sparkling wine - Methode Ancestrale 2.0 - . Physiologically ripe organic grapes of the Chardonnay, Riesling, Roter Veltliner and Muskateller varieties are harvested within a few days and gently pneumatically pressed.  After fermentation, the young wine is cooled and racked once and then mixed with fermenting must from the grapes harvested at the end and bottled in sparkling wine bottles. There, the slow final fermentation takes place in the bottles stored upside down. After appropriate storage on the yeast in the bottle, the bottles are disgorged by hand (opened to remove the yeast deposit in the neck of the bottle) and refined with sweet wine. The fusion with the subtle playfulness of Roter Veltliner, the noble fruit of Chardonnay, the animating acidity of Riesling and the muscat aroma of Muscat grapes produces a finely sparkling, fruity drinking pleasure with finesse!
